  • 3 LBS ROUND STEAK SLICED OR SIRLOIN
  • 3 GREEN PEPPERS SLICED
  • 2 ONIONS SLICED
  • FRESH MUSHROOMS AS MANY AS U WANT
  • 4 TOMATOES-QUARTERED
  • 1 1/2 CUPS ESPAGNOLE SAUCE
  • 1/2 CUP FLOUR
  • SALT & PEPPER

Instructions

MAKE GREEN PEPPER SAUCE

  • SAUTE GREEN PEPPERS , MUSHROOMS, ONION, & TOMATOES IN 1/2 CUP BUTTER FOR 5 MINUTES
  • ADD ESPAGNILE SAUACE & SIMMER 10 MINUTES
  • SALT & PEPPER STEAK, DIP IN FLOUR & SAUTE IN 1/4 CUP BUTTER FOR 2 MINUTES
  • ADD SAUCE & MEAT.
  • SIMMER FOR 15 MINUTES STIRRING FREQUENTLY.

ESPAGNOLE SAUCE

  • 3 TABLESPOONS FLOUR
  • 3 TABLESPOONS BUTTER
  • 2 CUPS BEEF BOUILLON
  • MELT BUTTER, ADD FLOUR & STIR UNTIL SMOOTH
  • ADD BOUILLON GRADUALLY & SOOK, STIRRING UNTIL THICKENED
  • MAKES ABOUT 2 CUPS
