Barb's Pepper Steak
Ingredients
- 3 LBS ROUND STEAK SLICED OR SIRLOIN
- 3 GREEN PEPPERS SLICED
- 2 ONIONS SLICED
- FRESH MUSHROOMS AS MANY AS U WANT
- 4 TOMATOES-QUARTERED
- 1 1/2 CUPS ESPAGNOLE SAUCE
- 1/2 CUP FLOUR
- SALT & PEPPER
Instructions
MAKE GREEN PEPPER SAUCE
- SAUTE GREEN PEPPERS , MUSHROOMS, ONION, & TOMATOES IN 1/2 CUP BUTTER FOR 5 MINUTES
- ADD ESPAGNILE SAUACE & SIMMER 10 MINUTES
- SALT & PEPPER STEAK, DIP IN FLOUR & SAUTE IN 1/4 CUP BUTTER FOR 2 MINUTES
- ADD SAUCE & MEAT.
- SIMMER FOR 15 MINUTES STIRRING FREQUENTLY.
ESPAGNOLE SAUCE
- 3 TABLESPOONS FLOUR
- 3 TABLESPOONS BUTTER
- 2 CUPS BEEF BOUILLON
- MELT BUTTER, ADD FLOUR & STIR UNTIL SMOOTH
- ADD BOUILLON GRADUALLY & SOOK, STIRRING UNTIL THICKENED
- MAKES ABOUT 2 CUPS
