Granma Libbey's Oatcakes
When I was a child, 4th of July our Granma Libbey would often make oatcakes. We absolutely loved them. I remember her arthritic hands rolling out the dough. Her Scottish heritage I will always remember through her oatcakes.
Ingredients
- 6 Cups Oatmeal
- 1 1/2 Cups Flour
- 1 1/2 tsp Baking Soda
- 1 1/2 tsp Salt
- 3/4 Cup Sugar
- 3/4 Cup Lard
- 1 Cup Hot Water
Instructions
- Combine Dry Ingredients & Mix Like a Pie Crust
- Add Lard & a Little Hot Water at a Time
- Roll Out Thin and Cut Into Squares
- Bake at 375 Degrees for About 10 Minutes
