Granma Libbey's Oatcakes

When I was a child, 4th of July our Granma Libbey would often make oatcakes. We absolutely loved them. I remember her arthritic hands rolling out the dough. Her Scottish heritage I will always remember through her oatcakes.

Ingredients

  • 6 Cups Oatmeal
  • 1 1/2 Cups Flour
  • 1 1/2 tsp Baking Soda
  • 1 1/2 tsp Salt
  • 3/4 Cup Sugar
  • 3/4 Cup Lard
  • 1 Cup Hot Water

Instructions

  • Combine Dry Ingredients & Mix Like a Pie Crust
  • Add Lard & a Little Hot Water at a Time
  • Roll Out Thin and Cut Into Squares
  • Bake at 375 Degrees for About 10 Minutes
