Auntie Bobbi's Roma Meat Loaf

Ingredients

  • 1 1/2 lb ground chuck
  • 1 egg
  • 1/4 cup cracker crumbs
  • 1/4 cup onions chopped
  • 1 can tomato sauce with cheese
  • 1 teaspoon oregano
  • 1/8 teaspoon pepper
  • 2 cups mozzarella cheese shredded

Instructions

  • Combine meat, egg, crumbs, onion, 1/2 tomato sauce & the seasonings.
  • Shape into 10 x 12 rectangle by rolling on wax paper
  • Spread evenly with the mozzarella cheese. Roll up like a jelly roll & press ends of roll together.
  • Place in roasting pan....bake 350 degree for 1 hour
  • Drain excess fat & pour remaining sauce over & bake 15 minutes more
