Grame's Raviolis

Grame's Raviolis are the perfect for large gatherings, or you can freeze them and save them for a quick down home weeknight meal.

Ingredients

Dough

  • 3 Cups Flour
  • 3 Eggs Beaten
  • 1 Tablespoon Vegetable Oil
  • 1/4 Teaspoon Salt
  • 1/2 Cup Water You will not use all of the water.

Meat Filling

  • 1 Pound Italian Sausage
  • 1 Pound Ground Beef
  • 1/2 Cup Bread Crumbs
  • 1/2 Cup Grated Parmesan Cheese
  • 2 Eggs
  • 1 Teaspoon Cloves
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Allspice
  • 1 Teaspoon Nutmeg
  • 1 Teaspoon Italian Seasoning
  • 1 Teaspoon Garlic Seasoning

Cheese Filling

  • 1 Pkg Baby Spinach Chopped Frozen & Drain Really Well
  • 8 oz Cream Cheese
  • 48 oz Mozzarella Cheese
  • 1 Pkg Small Curd Cottage Cheese

Instructions

Dough

  • Place flour in a large bowl and make a well in the center of the flour.
  • Drop eggs, oil and salt and knead together, use a Tablespoon of water at a time until dough is smooth when mixed. You will not use all of the water. 
  • Let dough sit for 5 minutes and then divide into 5 sections.

Filling

  • Mix all ingredients

Making Raviolis

  • Roll each of the 5 dough sections into 1/16 inch sheets. Use 2-2.5 inch round cookie cutter to cut dough blanks.
  • Use a round teaspoon to place filling into the center of the dough blanks.
  • Fold the blanks, and crimp the edges with a fork.

Notes

Serve with your favorite marinara, meat sauce or olive oil and spices.
