Grandma Carol Lahti’s Raviolis

Gramma Carol Lahti's Raviolis

Ingredients

Filling

  • 3 Pounds Ground Chuck
  • 1 Cup Parmesan Cheese
  • 1 Cup Chicken Bouillon
  • 1 tsp Nutmeg
  • 1 Handful Fresh Garlic
  • Pepper
  • 3-4 Crusty Rolls or Bread Soak in Bouillon and Squeeze Dry
  • Dash Cloves
  • 1 Eggs

Dough

  • 1 tbsp melted oleo
  • 2 eggs
  • 5 Heaping Cups All Purpose Flour Separate 2 Cups Flour
  • 2 tbps Salt
  • 11/2 Cups Water

Instructions

Filling

  • Brown chuck and mix all remaining ingredients.
  • Remove from heat and let cool.

Dough

  • Mix ingredients. Once mixed at 2 remaining cups of flour
  • Cool

Rolling Dough

  • Roll 1" thick by 4 1/2" wide dough into strips
  • Place meatballs (3/4"-1") and space apart.
  • Cover with separate dough strip, cut and crimp with fork.
  • Freeze in single layers on a pan until solid
  • Package once frozen

Cooking

  • Boil Water and cook 5-7 minutes or until al dente.
